To make the paneer, grease a deep non-stick pan with 1/4 cup of water and boil quickly for 2-3 minutes. This will prevent the milk from burning as the water forms a protective layer between the pan and the milk. When the milk starts boiling, turn off the gas and wait for 1 minute. To speed up the process of curd formation and to prevent the cheese from becoming grainy, the milk should be heated before adding acidic substances to it. If the milk is not curdled well, add more acid. But, if you add too much acid then the cheese will become hard. The amount of acidic agent is purely decisive. You can also make paneer recipe at home by curdling full fat milk using curd, buttermilk or citric acid.
